TO TOASTTO TOAST

Applying dry heat to a dry ingredient until its surface browns and its aromatics wake up.

Why it works

Toasting is browning without any cooking medium at all — no fat, no liquid — so the only thing happening is heat on a dry surface. In bread and grains that means Maillard browning and, at the surface, some caramelisation of sugars. In spices, nuts and seeds it means something slightly different and more useful: their aromatic compounds are largely fat-soluble and locked in cell structures, and heat both volatilises them and ruptures the cells holding them, which is why a toasted cumin seed smells of something a raw one only hints at. Toasting also drives off residual moisture, which is why toasted nuts stay crisp in a salad and raw ones go soft. The margin is narrow throughout, because with no medium to buffer it, the surface is at the pan's temperature directly.

When it goes wrong

Bitter, acrid spices.
A few seconds too long. Spices go from fragrant to burnt faster than almost anything else, and the bitterness is permanent.
Nuts kept browning after coming off the heat.
Carryover. Nuts and seeds hold heat well and continue cooking in the pan or on the tray — tip them onto a cold plate immediately.
Uneven, some pale and some dark.
Left still, or the pan crowded. A single layer with regular movement is the whole method.
Nothing happened after several minutes.
Heat too low. Toasting needs a properly hot pan; at low heat things dry out and go stale rather than browning.

Recovering it

Under-toasted is trivially fixed by continuing. Burnt is not fixable at all — burnt spices will define a dish and the correct move is to discard them and start again, which costs a teaspoon. The most useful habit is to toast spices whole and grind them after, since whole seeds have far more margin than ground powder, which can burn in under ten seconds.
