1 lbbeef (sirloin, thin strips)
5 tbspsoy sauce (divided)
3 tbspsugar (divided)
3 tbspsesame oil (divided)

    beef, while everything else preps
    beef strips + 1 tbsp soy + 1 tsp sugar + 1 tsp sesame oil + a quarter of the garlic — a quick seasoning that makes the beef its own component with its own voice, which is the japchae doctrine in miniature

    spinach 30 seconds, squeezed, seasoned
    spinach into boiling water for half a minute, shocked, squeezed dry and dressed with a pinch of salt + a drop of sesame oil — the first of the separate components, and the template for all of them: cooked alone, seasoned alone

    each vegetable alone, in sequence, salted lightly
    carrot, then onion, then the soaked shiitake, each in a little oil in the same pan, each to just-tender, each set aside in its own pile — the sequence runs light to dark so the pan needs no washing; the piles stay separate because their moment to meet has not come

    high, the beef last
    the marinated beef in the hot pan until browned at the edges — last through the pan so its juices don't muddy the vegetables' turn

    noodles per package, rinsed, scissored
