Even halves matter more than they sound: a thick half and a thin half on the same tray reach the broiler at different moments, and there is no adjusting once the cheese is on. Leave space between them so hot air can reach the sides, and use a bare pan or parchment rather than foil pressed flat against the bottoms, which traps steam

    425°F / 220°C, bare, no toppings, turned once
    the split halves, given five minutes of dry heat before anything touches them. This is the step the dish is usually missing. A bagel is already fully baked bread and needs no cooking — what it needs is a dry surface, because the cut face is porous and will drink sauce straight into the crumb. Driving moisture out of that face first sets a firm surface that the sauce sits on rather than soaks into. Skip this and the base is wet before the cheese has even melted

    1 to 2 tablespoons of sauce per half, no more, spread thin and even
    toasted halves + sauce spread to the edge in a thin even layer + mozzarella + pepperoni. Two tablespoons per half is a maximum, not a suggestion — sauce is mostly water, and a generous scoop is the second half of the sogginess problem the toast step just solved. Spread it rather than dolloping it: a thick centre stays wet while the rim burns. Use low-moisture mozzarella and not fresh, which releases water as it melts and undoes everything above

    425°F / 220°C, middle rack, until the cheese is melted through but still pale
    the topped halves, baked until the cheese has fully melted and pooled flat and the sauce is bubbling at the edges. This stage is about heating the bagel through and melting the cheese, not colouring it — the oven's ambient heat browns cheese slowly and by the time it does the bread underneath is dry and hard. Take it out while the top is still pale

    top rack under a preheated broiler, oven door ajar, watched the entire time
    the melted bagels, moved under direct top heat for one to two minutes until the cheese blisters and takes brown spots. Browning needs radiant heat from above, which is what the broiler element supplies and the bake cannot. Stand at the oven and do not leave: the interval between spotted brown and burnt here is under a minute, and it is the one step in this recipe where the dish is lost in seconds rather than degrees. Pepperoni edges curl and darken first and are the visual cue that the cheese is about to follow

    on the pan, uncovered
    the finished bagels, left two or three minutes before they are eaten. Molten cheese slides off the bread and burns mouths straight out of the broiler; a short rest lets it set enough to stay on the bagel. Leave them uncovered on the pan — stacking them or putting them on a plate under foil traps steam against the base and softens the surface you spent the first five minutes drying out
