| 2 cup | cauliflower florets |
| ¾ cup | green peas |
| 1 unit | green bell pepper (diced) |
| 1 unit | yellow onion (finely chopped) |
| 4 unit | tomatoes (finely chopped) |
| 1 tbsp | fresh ginger (grated) |
| 4 clove | garlic (minced) |
| 2 ½ tbsp | pav bhaji masala |
| ½ tsp | ground turmeric |
| 6 tbsp | butter, divided |
| 1 ½ tsp | salt |
| 8 unit | pav or soft dinner rolls |
| 1 unit | fresh lemon |
| ½ cup | fresh cilantro (chopped) |
Method
- boil15 minpotato and cauliflower crush effortlessly with a spoonBoil or steam potatoes, cauliflower and peas until completely tender. Pav bhaji depends on a cohesive mash, so vegetables that are merely fork-tender remain lumpy and separate.
- saute7 minonion and pepper soft and aromaticMelt half the butter in a wide pan and cook onion and bell pepper until soft, then add ginger and garlic. Cook until their raw sharpness disappears.
- simmer10 mintomatoes collapsed and masala no longer tastes rawAdd tomatoes, pav bhaji masala, turmeric and salt. Cook until the tomatoes break down and the mixture looks glossy; rushing this stage leaves a raw tomato flavor in the finished bhaji.
- mash8 minvegetables integrated into a coarse creamy mashAdd the tender vegetables and mash them directly into the masala. Work until the mixture is cohesive but not perfectly smooth, adding small splashes of water only if it is too stiff to move in the pan.
- simmer6 minbhaji thick and spreadable, not runnyStir in two more tablespoons butter and simmer gently, scraping the pan. The finished bhaji should spread on a plate but hold a mound rather than flow like soup.
- toast4 mincut faces of rolls golden and butterySplit the pav and toast the cut sides in the remaining butter until golden. Browning the bread gives contrast to the soft bhaji and helps it resist immediate sogginess.
