    cabbage + carrot + onion scalded with a kettle of boiling water, drained, tossed with vinegar + oregano + 1/2 tsp salt — made first because curtido at minute zero is coleslaw and curtido at minute sixty is curtido; overnight is better still

    to a dough noticeably softer and wetter than the sope or tortilla masa — pupusa dough must stretch around a filling without cracking, and the universal fix for cracking is a splash more water and a bowl of water for your hands
