Tomato paste straight from the tin tastes tinny and metallic; frying it in fat caramelises its sugars and cooks that off, and it is the single biggest difference between a kabsa base that tastes cooked and one that tastes canned. The carrot is not for texture — it dissolves entirely and adds sweetness against the sour lime
- season2 minspices into the hot fat, 30 to 45 seconds only+ cumin + coriander + cardamom + cinnamon + cloves + nutmeg + black pepper + salt, stirred through the hot base until they smell warm and sweet. Ground spice releases its aroma into fat far better than into water, so it goes in here rather than with the liquid. Half a minute is the whole window: these are already-ground spices with nowhere to hide, and they scorch into bitterness in the time it takes to find the next ingredient
