    Cook the bacon until browned and render enough fat to use for the mushrooms or tomatoes if desired. Hold it warm but uncovered so trapped steam does not soften crisp edges.

    Cook mushrooms over enough heat to evaporate their water and brown them, and sear the tomato halves cut-side down until softened. Crowded mushrooms steam gray instead of developing savory browned flavor.
