Method
- brine240 minrefrigerated, 4 hours to overnightchicken + buttermilk + pickle brine + hot sauce + 1 tsp salt — the lactic and vinegar acids loosen the muscle fiber without denaturing the surface the way a straight vinegar marinade would, which is why an all-brine soak turns the outside chalky and this one does not. Four hours is the floor; past twelve the thigh goes mushy
- mix4 mindryflour + cornstarch + baking powder + smoked paprika + garlic powder + onion powder + cayenne + black pepper + remaining 1 tsp salt. The cornstarch dilutes the gluten so the crust shatters rather than bends, and the baking powder gasses slightly on contact with the wet marinade to lift the coating off the meat
- prep6 minworking one piece at a timedrizzle 3 tbsp of the marinade into the flour and rake it with your fingers into pea-sized clumps, then press each drained cutlet hard into the mix, turning twice. Those clumps are the craggy bits; a smooth dredge fries smooth. Rest the coated pieces 10 minutes so the flour hydrates and glues itself down instead of sloughing into the oil
- fry14 min340°F, two pieces at a timechicken in the peanut oil, undisturbed for the first 3 minutes so the crust sets before you move it, then turn once. 6–7 minutes per batch to 165°F internal. Below 325°F the coating drinks oil; above 365°F the crust browns before the thigh is safe
- rest5 minon a wire rack, never paperfried cutlets — a rack lets steam escape from underneath, while paper towels trap it and soften the bottom crust within a minute
- mix2 minmayonnaise + 1 tbsp of the reserved pickle brine + a few dashes hot sauce = sauce. The fat carries the heat and the acid resets the palate against a deep-fried crust
- toast2 minbuttered, cut side down, mediumbuns + butter until the cut faces are browned and sealed — the browned fat waterproofs the crumb so the sauce and chicken juices sit on top of the bun rather than soaking through it
- top2 minassemble hotbottom bun + sauce + shredded lettuce + pickle slices + fried cutlet + sauce on the top bun. Lettuce and pickles go under the chicken, not over it: cold crisp against the bun, and nothing wet steaming down onto the crust
