If you do not have it

• Milk plus lemon juice · 1 cup milk + 1 tbsp lemon juice, stand 10 minutes
  The acid is what matters — it reacts with baking soda and tenderises. Thinner than real buttermilk, so batters are slightly looser.
• Plain yogurt thinned with water · 3 parts yogurt to 1 part water
  Closest in body. Adds a little more fat.
