| 1 ¼ cup | blueberries |
| 1 tsp | vanilla (extract)optional |

Method
- whisk3 mindry ingredients together thoroughly, before any liquidflour + sugar + baking powder + baking soda + salt whisked until uniform. Leavening distributed unevenly gives soapy, bitter pockets where the soda concentrated — thirty seconds here prevents it entirely
- whisk2 minseparate bowl, eggs beaten first, then the resteggs beaten alone until uniform, then + buttermilk + melted butter (+ vanilla, + lemon zest). Cool the melted butter first — poured hot into buttermilk it seizes into flecks that never disperse
- mix2 minwet into dry, a few strokes only, lumps LEFT ALONEwet poured into dry and folded until the last streak of dry flour disappears. Stop there. The batter should look wrong — lumpy and unappealing — because a smooth glossy pancake batter has developed gluten, and gluten is what turns a tender pancake chewy and drives the gas into a few large tunnels instead of a fine crumb
- rest12 mincovered, at room temperature, 10-15 minutesthe batter, which does two things: the flour finishes absorbing liquid so the lumps hydrate and vanish on their own, and the gluten that did develop relaxes. Do not stir it again afterwards — the bubbles now on the surface are the lift
- fry10 minmedium-low, buttered pan, blueberries dropped ON each poured pancakebatter ladled into the pan, then + blueberries scattered onto each one from above. Placed rather than folded, so the fruit stays whole and the batter stays pale. Turn when the surface is covered in bubbles that stay open and the edges look dry — usually two to three minutes. Only once; a pancake turned twice is a flat pancake
- rest1 minwire rack in a 90°C oven, never stackedfinished pancakes held on a rack (+ syrup to serve). Stacked, they steam each other soggy within a minute. Medium-low heat throughout, because a pancake browns in ninety seconds on high while the centre is still batter
