Preparación
- hervir10 minwell-salted water, just to al dentecook the pasta until the center is tender with a faint bite, then drain without rinsing and reserve a splash of pasta water. The bowl is assembled from separate components, so pasta cooked soft now has no later sauce simmer in which to recover structure.
- saltear5 minmedium heatonion in a wide dry pan with a spoonful of fat rendered from the beef once it starts cooking, until translucent and beginning to color, then + half the garlic for the final 30 seconds. Garlic goes late so it perfumes the meat without scorching during the browning stage.
- sellar9 minmedium-high, wide pan, meat left undisturbed in patches+ ground beef + tomato paste + cumin + 1 tsp paprika + 3/4 tsp salt + black pepper. Press the meat into the pan, let dark crust form before breaking it up, then cook until browned and no wet steam remains. The dry browned texture is what keeps the meat distinct against cool yogurt instead of turning the dish into a loose meat sauce.
