Ingredients

Servings:
12 ozshort pasta (bows, shells or similar)
1 lbground beef
1 unitonion (finely diced)
1 ½ tbsptomato paste
1 tspcumin (ground)
2 tsppaprika
1 ½ cupyogurt (plain, thick)
4 clovegarlic (finely grated, divided)
3 tbspbutter
1 ½ tspsalt
½ tspblack pepper
1 unitlemon (juice, in the yogurt)optional
1 tbspmint (chopped or dried, for finishing)optional
½ cuptomato (diced, modern viral garnish)optional
¼ tspred pepper flakesoptional

Method

  1. boil10 min
well-salted water, just to al dente
cook the pasta until the center is tender with a faint bite, then drain without rinsing and reserve a splash of pasta water. The bowl is assembled from separate components, so pasta cooked soft now has no later sauce simmer in which to recover structure.
  2. saute5 min
    medium heat
onion in a wide dry pan with a spoonful of fat rendered from the beef once it starts cooking, until translucent and beginning to color, then + half the garlic for the final 30 seconds. Garlic goes late so it perfumes the meat without scorching during the browning stage.
  3. sear9 min
medium-high, wide pan, meat left undisturbed in patches
+ ground beef + tomato paste + cumin + 1 tsp paprika + 3/4 tsp salt + black pepper. Press the meat into the pan, let dark crust form before breaking it up, then cook until browned and no wet steam remains. The dry browned texture is what keeps the meat distinct against cool yogurt instead of turning the dish into a loose meat sauce.
  4. mix2 min
yogurt stays cool or room temperature
yogurt + remaining garlic + 1/4 tsp salt, plus optional lemon, until smooth. Do not cook this sauce in the beef pan: direct high heat can split the yogurt and removes the hot-cold contrast that defines the mantı-style assembly.
  5. infuse2 min
low heat; butter foaming but not browned
melt butter + remaining 1 tsp paprika + optional red pepper flakes until the spices bloom and the butter turns brick-red and fragrant, about 30 seconds after foaming. Pull it from the heat before the paprika darkens, because scorched paprika tastes metallic and bitter.
  6. season3 min
    assemble immediately before eating
divide warm pasta into bowls, spoon cool garlic yogurt over it, add the browned meat, then drizzle with hot paprika butter. Finish with mint and optional fresh tomato. Keep the components visibly layered until the diner mixes them; that contrast is the point of Yalancı Mantı, not a defect to stir away in the pan.
