12 ozpollo (boneless, small dice)
3 unithuevos
5 unitcebolla de verdeo (white and green parts separated, sliced)

1 tspaceite de sésamo
3 tbspaceite vegetal

    Separate any clumps in the cold rice and stage every ingredient within reach. Once the pan is hot there is no useful pause: day-old or thoroughly chilled rice has a drier surface and firmer starch structure, so the grains can fry and separate instead of releasing steam and turning sticky.

    Beat the eggs with a pinch of pepper, pour them into the hot pan and scramble just until softly set, then remove them. Cooking the egg separately protects its texture and keeps the later rice fry from becoming a wet scramble.

    Brown the chicken hard, stirring only after the first surfaces color, then remove it when cooked through. If the pan is crowded, split the chicken into two passes. Chaufa's defining toasted flavor comes from surface heat; a pan full of released water cannot produce it.

    Add scallion whites, ginger and garlic (+ bell pepper) and stir only until aromatic. These aromatics bridge the Chinese fried-rice technique and Peruvian Chifa flavor; keep the heat high and the contact short so garlic does not burn before the rice arrives.

    Add the chilled rice and toss to coat, then repeatedly spread it against the hot metal for several seconds before turning. You are drying and lightly toasting individual grains, not merely warming leftovers. Return the chicken once the rice is hot and separated.

    soy around the hot edge of the pan, then egg + scallion greens + sesame oil off the fiercest heat
    Pour in most of the soy sauce (+ oyster sauce), toss, taste and add the rest only if needed; soy brands vary sharply in salt. Fold back the egg and scallion greens, then finish with the teaspoon of sesame oil. Sesame oil is perfume, not frying fat: using it as the main oil makes the dish heavy and scorches its aromatics.
