Preparación

    wide pot, medium heat; onion + carrot first, then beet + tomato paste
    Heat the oil and soften the onion and carrot, then add the beets and tomato paste and cook until the paste darkens slightly and the beet edges begin to soften. Giving the roots their own hot-pan phase develops sweetness and keeps the finished soup from tasting like every vegetable was simply boiled together.
  2. water + potato added, gentle simmer, partially covered
    Add the water and potato and simmer until the potato is almost tender. The potato needs a head start because starchier root pieces take longer than shredded cabbage; putting everything in at once either leaves hard potato or turns the cabbage anonymous.

    Add the sliced cabbage and simmer only until it is tender with a little structure left. Borscht should contain distinct vegetables in a coherent broth, not a uniformly soft puree of roots and cabbage.

    low heat, vinegar + sugar + salt added in stages and tasted between additions
    Stir in the vinegar, sugar and salt, then taste before changing anything. Beet is naturally sweet and different batches vary, so acidity is a balancing tool rather than a fixed flavoring dose: add more vinegar only until the sweetness feels lifted, not sharply pickled. Stir in the garlic at the end so its aroma stays present.
  5. heat off, covered loosely before serving
    Let the soup stand before serving. The rest evens out the temperature and gives the beet, tomato, garlic and acid time to read as one broth instead of separate additions. Finish with dill and sour cream if using; they should frame the sweet-sour soup, not hide it.
