Ingredients

Servings:
1 lbchicken (breasts, halved and pounded thin)
½ cupflour (for dredging)
1 tspsalt
½ tspblack pepper
2 tbspolive oil
3 tbspbutter (divided)
8 ozmushrooms (cremini, thick slices)
1 unitshallots (minced)
¾ cupMarsala (dry)
½ cupchicken stock
2 tbspparsley (chopped)
¼ cupheavy creamoptional

Method

  1. prep8 min
    cutlets 1/4 inch, dried well
chicken halved horizontally, pounded even and patted dry, then seasoned — thin and uniform is what lets the meat cook through in the time a proper crust takes; wet surfaces steam and never brown
  2. season2 min
    dredged, excess shaken off
through the flour just before the pan, not ahead — flour that sits on wet chicken turns to glue; a thin dry dusting is what will thicken the sauce later from the browned bits it leaves behind
  3. sear8 min
    medium-high, single layer
cutlets in oil + 1 tbsp butter, 3 minutes a side to deep gold, then out to a plate — they are done before the sauce exists and finish in it; crowding the pan here is the recipe's one unrecoverable error
  4. saute6 min
    medium-high, do not salt yet
mushrooms in the same pan until their water is thrown and gone and they begin to brown — salt this early pulls that water right back out and they boil; shallots join for the final minute
  5. deglaze5 min
    medium-high, reduced by half
+ Marsala, scraping the fond up as it boils — the wine must genuinely reduce, not just heat through; what boils away is the alcohol's harshness, what remains is the oxidized depth that names the dish
  6. simmer4 min
    medium, cutlets back in
+ stock, cutlets and their juices returned to warm through — the flour crust releases into the liquid and tightens it to a glaze that naps the meat
  7. top1 min
    off heat
remaining butter swirled in, parsley over — butter mounted off the heat emulsifies into gloss; over a flame it just melts into grease
