Ingredients

Servings:
1 ½ cupall-purpose flour
1 ¼ cupsugar
5 uniteggs
2 ½ cupmilk
6 tbspbutter
2 tspvanilla
3 tbspcornstarch
6 ozdark chocolate
¾ cupheavy cream

Steps

  1. whisk8 min
    cake batter smooth and aerated
Prepare the sponge-style batter without overworking the flour. The cake should be tender enough to cut cleanly yet sturdy enough to hold a thick custard layer.
  2. bake30 min
cake golden and springing back at center
Bake until just done, then cool completely. Warm cake melts pastry cream and turns assembly unstable.
  3. temper10 min
egg mixture warmed gradually and free of curds
Whisk eggs or yolks with sugar and cornstarch, temper with hot milk, then return to the pan. Gradual heating prevents scrambled bits in the pastry cream.
  4. simmer5 min
pastry cream thick enough to hold a mound
Cook the custard until bubbling and fully thickened, then finish with butter and vanilla. Cover the surface and chill completely so it can support the top cake layer.
  5. mix5 min
    chocolate ganache glossy and pourable
Pour hot cream over the chocolate and stir from the center until smooth. Let it cool just enough to thicken while remaining pourable.
  6. rest30 min
assembled cake chilled and filling set
Fill the cooled cake with a generous even layer of pastry cream, top with the second layer and pour ganache over the crown. Chill before slicing for clean portions.
