Method
- prep3 minoven at 350Fbutter a small 6-inch pan or two wide ramekins and line the base — the cake gets soaked in the pan it bakes in, so it must hold liquid without leaking

- whisk4 minclean bowl, medium-highegg whites to soft peaks, then + remaining 2 tbsp sugar and whip only until the peak bends over at the tip — whipped to dry, stiff peaks the foam has no stretch left, it tears during folding, and the cake bakes tight and refuses the soak
- fold2 minby hand, spatulawhites into the yolk batter in three additions, cutting down and sweeping up around the bowl — count the strokes and stop while it still looks marbled; every deflated bubble is a pore that will not be there to drink the milk

- rest240 mincovered, refrigeratedthe soak has to travel; four hours is when the crumb is uniformly saturated and firm enough to cut, and overnight is better. Any liquid still loose in the pan at this point means the sponge was overbaked and has stopped accepting it
