Steps

    Layer bread with ham, turkey and Swiss cheese and press gently into compact sandwiches. Keep filling even to the edges so the battered bread cooks flat against the pan and the cheese melts uniformly.

    Whisk eggs and milk until completely combined. Use a shallow dish wide enough for the sandwich so it can be coated quickly without soaking one edge much longer than the other.

    Dip each sandwich briefly on both sides in the egg mixture and let excess drain. The bread needs enough custard for a French-toast exterior, not enough to become wet through to the filling.

    Cook in butter over medium heat, pressing lightly and turning once, until the exterior is deep golden and the cheese melts. High heat browns the egg coating before the cold meat and cheese warm through.
