8 unitdried chiles, softened
4 unitshallots

1 tspground turmeric

1 lbboneless chicken thighs (thinly sliced)
1 lbpeeled shrimp
6 oztofu puffs (halved)
2 cupbean sprouts

Method

    aromatics form a moist, fine paste
    Blend the softened chiles, shallots, garlic, lemongrass, ginger and turmeric to a fine paste, adding only enough water to keep the blades moving. A coarse wet paste takes longer to lose raw flavor.

    paste darkened, intensely fragrant and oil separating around edges
    Fry the paste in oil over medium-low heat, stirring often, until its moisture cooks off and oil becomes visible around the edges. This is the central laksa cue: stock added before the paste is properly fried leaves the broth raw and one-dimensional.

    broth aromatic and slightly reduced
    Add chicken stock and simmer so the fried paste disperses fully into the broth. Scrape the pan clean so the browned aromatic fond returns to the soup rather than burning.

    Add coconut milk, fish sauce, chicken and tofu puffs and simmer gently until the chicken is done. Avoid a hard boil after coconut milk enters; aggressive heat can make the broth greasy and dull its aroma.

    Cook the rice vermicelli separately according to its thickness, then drain well. Separate noodle cooking keeps starch and excess soaking water from thinning the coconut broth.

    Add shrimp to the laksa only at the end and simmer until just cooked. Carryover heat continues to firm seafood, so do not wait for it to become tight in the pot.

    Taste with lime juice and salt, adjusting fish sauce only if more savory depth is needed. The broth should be rich but not flat or excessively salty.
