2 ozwhite bread
1 ¼ cupmilk
3 uniteggs
3 tbspfruit chutney
¼ cupsultanas
1 tbsplemon juice
3 unitbay leaves
1 ½ tspsalt

    bread fully saturated and soft
    Soak the bread in part of the milk, then squeeze lightly and reserve the milk. The softened bread binds the meat without making the casserole dense.

    onion soft and beef no longer pink
    Cook the onion, add curry powder until fragrant, then brown the beef gently. Keep breaking up large clumps so the custard later settles over an even surface.

    meat evenly seasoned and moist but not wet
    Stir in the soaked bread, chutney, sultanas, lemon and salt. Taste before baking because the mild custard will soften the perceived seasoning.

    Spread the meat in a shallow baking dish and bake briefly so excess moisture evaporates before the custard goes on.
