Steps
- whisk2 mindry, large bowlflour + cornstarch + sugar + baking powder + baking soda + salt, whisked until the leaveners are evenly dispersed — pockets of undissolved baking soda taste soapy and leave dark spots on the crust. The cornstarch dilutes the gluten so the shell stays brittle instead of bready.
- whisk2 minmelted butter cooled to lukewarmegg yolks + buttermilk + melted butter + vanilla. If the butter is hot it curdles the buttermilk into visible flecks; if the buttermilk is fridge-cold the butter seizes into shot. Both cook out, but the batter pours unevenly.
- mix1 minjust combined, lumps allowedwet into dry, folded only until no dry flour is visible. Stirring smooth builds gluten, and gluten is what makes a waffle chewy and leathery rather than crisp.
- rest8 mincovered, room temperaturebatter alone, before the whites go in — the flour hydrates fully and the acid in the buttermilk starts working on the baking soda. Rest it after folding in the whites and you lose the air instead.
- whisk3 minsoft peaks, clean cold bowlegg whites, until they hold a peak that flops at the tip. Any yolk or grease in the bowl blocks the protein film and they will not climb; taken to stiff peaks they tear when folded and leave dry streaks.
