Method

    onion in vegetable oil until deep brown and slack, not black — pull them a shade early because they darken off the heat, and burnt birista turns the whole pot bitter. Reserve the drained oil; half the fried onions go into the marinade, half on the layers = birista

    room temperature, or 4 hours cold
    chicken + yogurt + ginger + garlic + lemon juice + cayenne + turmeric + garam masala + marinade salt + half the birista. The yogurt is structural, not decorative: its acid and calcium loosen the muscle fibers, and the milk proteins coat each piece so it releases liquid slowly during the dum instead of dumping it all at once and boiling the rice from below

    saffron crushed into warm milk until the milk runs orange. Crushing matters — whole threads stain in streaks; boiling milk drives off the volatile part and leaves only color

    water + rice-water salt + cardamom + cloves + cinnamon + bay leaf + drained soaked rice, cooked to roughly 70 percent — a grain should snap between the teeth with a hard white core. The water must taste aggressively salty because this parboil is the only moment rice takes on salt; almost all of it goes down the drain. Drain the instant it hits that point, and spread it out so carryover heat escapes

    marinated chicken spread flat in the bottom of the pot + the rice piled loosely over it in one even layer no more than two inches deep + remaining birista + mint + cilantro + saffron milk poured in streaks + melted ghee and the reserved onion oil. Do not stir and do not pack — the loose column is what lets steam climb
