| 8 cup | chicken stock |
| ¾ cup | long-grain rice |
| 3 unit | eggs |
| ⅜ cup | fresh lemon juice |
| 1 unit | yellow onion (halved) |
| 1 unit | carrot |
| 1 unit | celery stalk |
| ¼ cup | fresh dill |
| 1 ½ tsp | salt |
| ½ tsp | black pepper |
Method
- simmer20 minchicken just cooked throughSimmer chicken gently in the stock with onion, carrot and celery until just cooked. Remove the chicken, discard or reserve the large aromatics and keep the broth hot but not violently boiling.
- simmer15 minrice tenderAdd rice to the broth and simmer until tender. Shred the chicken while the rice cooks, then return the meat to the pot.
- whisk2 mineggs and lemon completely smoothWhisk eggs until uniform, then whisk in fresh lemon juice. A smooth mixture incorporates hot broth more evenly and reduces the chance of egg strands.
- temper4 minegg-lemon mixture hot to the touchWhile whisking constantly, add two or three ladles of hot broth to the eggs in a slow stream. This gradual temperature rise is the technique that prevents scrambled eggs.
