Establishing quantity by mass, which is the same number every time regardless of how the ingredient was handled.
Why it works
Mass does not depend on packing, humidity or how the cup was filled, so it is the only measurement that makes a recipe reproducible. It also unlocks ratio thinking, which is how professional baking actually works: expressing every ingredient as a percentage of the flour weight — baker's percentage — means a formula scales to any quantity without arithmetic errors, and two recipes can be compared directly. A dough at 70% hydration is a known thing; a dough with 'three cups of flour and a cup and a half of water' is not, because nobody knows how much flour that was. Weighing also removes an entire class of failure in bread and pastry, where a ten percent error in hydration is the difference between a slack dough and a stiff one.
How to tell
- The scale is tared with the bowl on it, then tared again after each addition — everything goes into one bowl and the number resets.
- Readings settle before you trust them; a scale still climbing has not finished.
- For anything under about 5 g the scale's resolution is the limit — that is where spoons are more accurate, not less.
- Hydration expressed as a percentage tells you what a dough will feel like before you touch it.
When it goes wrong
- The total is wrong even though each addition looked right.
- Forgot to tare between ingredients, so a later reading included an earlier one.
- Small quantities read as zero or jump erratically.
- Below the scale's resolution. Most domestic scales work in 1 g steps, which cannot resolve 2 g of yeast meaningfully.
- Readings drift during a long mix.
- The scale auto-zeroed or timed out. Weigh into a bowl and set it aside rather than leaving it on the platform.
- A converted recipe comes out wrong.
- A generic cup-to-gram conversion was used. Density is per ingredient — a cup of flour is 125 g, a cup of honey is 340 g.
Recovering it
An over-addition caught immediately can often be spooned back out if it landed on top of a dry pile. Once liquids are in, the only clean fix is to scale everything else up to match — which is easy if you are working in ratios and painful if you are not. That is the underlying argument for weighing: not that it is more precise in the moment, but that it makes mistakes correctable.
