Mechanism
The fat is a heat-transfer medium: it fills the microscopic gaps between food and metal so far more of the surface actually reaches cooking temperature than would in a dry pan. Motion is the other half — pieces that sit still brown on one face and stay raw elsewhere, and pieces that move present every face in turn, which is why this suits things cut small. The governing constraint is the same one that governs searing: food releases water, and the pan must stay hot enough to boil it off as fast as it arrives. Once the rate of release exceeds the rate of evaporation the pan floods, the temperature falls to 100°C, and the food stews. That threshold is set by pan area and heat, not by the recipe, which is why sautéing is the technique most often ruined by doubling a batch.
Success criteria
A continuous, energetic sizzle. Silence means the pan has flooded; spitting and smoke mean it is too hot and the fat is breaking down.
Onions go from opaque to translucent before they take any colour — that transition is the marker for a sweat, and past it you are browning.
Liquid should never pool. If you can see a puddle, raise the heat or take half the food out.
Aromatics announce themselves. Garlic smells sweet and nutty for a few seconds and then sharp and bitter — the second smell means it has gone.
Failure guards
Vegetables are grey, limp and sitting in liquid.
Overcrowded pan. Every extra handful lowers the temperature and adds water, and past a threshold nothing evaporates.
Garlic is bitter and the whole dish tastes of it.
Added at the same time as the onion, or into an already-hot pan. Garlic has a fraction of an onion's water and burns in the time an onion needs to soften.
The outside is dark and the inside is raw.
Heat too high for the size of the pieces. Sautéing cooks from the surface inward; anything thicker than a centimetre or so needs lower heat or a finish somewhere else.
