Method

    warm water, by hand
    salt dissolved in the warm water first, then masarepa rained in while stirring — the flour is already cooked and its starch is pre-gelatinized, so it drinks water on contact and sets into a plastic dough with no gluten and no leavening to do the work. Reverse the order and you get lumps of hydrated flour with dry powder trapped inside. Nixtamalized masa harina is not a substitute; it hydrates short and the discs crumble

    the dough, until it stiffens from batter-loose to modelling-clay firm and no longer sticks to a wet palm. This is hydration finishing, not fermentation — nothing rises here

    dough divided into 4 balls, each flattened to a disc about 1 cm thick and 9 cm across, rims smoothed with a wet finger. Every crack you leave at the edge widens as the interior steam expands, and the arepa splits instead of puffing

    discs in the oiled pan, undisturbed until a dry speckled crust lifts free without tearing, then flipped once. Medium, not high: the outside has to hold long enough for the centre to hydrate through into steam, and high heat gives you a scorched shell over raw paste

    the arepas, until they sound hollow when tapped and feel light for their size — that hollow is the steam pocket, and it is what lets you split them. Variant: for discs thicker than 2 cm, move the seared arepas to a 200°C oven for 10 minutes instead
