Mechanism
In potatoes this technique has a failure mode nothing else shares. Cooked potato is a mass of starch granules swollen inside intact cells, and the goal is to separate those cells while keeping them whole. Crushing gently โ a ricer, a masher, a fork โ parts the cells. Beating hard, and especially blending, ruptures them and spills free starch into the mix, which turns instantly gluey and elastic. That texture is irreversible: there is no way to put starch back inside a cell. For fruit, beans and garlic the concern is only how coarse you want it. Temperature matters too โ butter and cream fold in better while the potato is hot, and cold potato reabsorbs less and mashes stodgily, so the dish should be assembled straight off the heat.

Undercooked potato. Lumps are pieces that were never soft, and mashing harder only damages everything around them.
