Mechanism

Wheat flour contains two proteins, glutenin and gliadin, which are inert until water reaches them. Hydrated and then worked, they cross-link into gluten — long elastic strands that give dough both strength and stretch. Strength lets the dough hold the carbon dioxide the yeast produces instead of letting it escape; stretch lets it expand rather than tear. Kneading supplies the mechanical energy that aligns and links those strands, and time alone will do some of the same work, which is why no-knead breads exist and simply take twelve hours instead of ten minutes. Fat interferes with the process by coating the proteins, which is why enriched doughs add butter after the gluten has developed rather than at the start.

Success criteria

  • The windowpane test is the definitive one: stretch a piece thin enough to see light through it. If it holds without tearing, the network is built.
  • The dough changes from shaggy and sticky to smooth and slightly tacky, and stops leaving residue on the hands.
  • It pushes back. A developed dough springs against the heel of the hand instead of squashing.
  • The surface goes from dull and torn-looking to satiny.

Failure guards

The dough tears rather than stretches, and the baked loaf is dense with a tight crumb.
Under-kneaded. The gluten network is not continuous, so gas escapes through the gaps instead of inflating it.
The dough is slack, sticky and will not hold a shape, after a long time in a mixer.
Over-kneaded, which is almost only possible by machine. The gluten strands have been worked past breaking and cannot re-form.
It fights back so hard it will not roll out.
Not under-kneaded but under-rested. Gluten needs time to relax after working; ten minutes covered solves it.
