Why it happens
Over-mashed. This one is a preference rather than a fault, but the coarse version is what most sources describe.
Recovering it
Gluey potato is not recoverable as mash — it can be repurposed into potato cakes or a topping where the chewiness is unremarkable. Watery mash is fixed by drying it out over low heat. Lumps mean the potato needed longer, and the honest fix is to cook the lumps out separately or accept them. The prevention for all of these is to use a floury potato, cook it fully, dry it, and use the least aggressive tool that will do the job.
The mechanism
In potatoes this technique has a failure mode nothing else shares. Cooked potato is a mass of starch granules swollen inside intact cells, and the goal is to separate those cells while keeping them whole. Crushing gently — a ricer, a masher, a fork — parts the cells. Beating hard, and especially blending, ruptures them and spills free starch into the mix, which turns instantly gluey and elastic. That texture is irreversible: there is no way to put starch back inside a cell. For fruit, beans and garlic the concern is only how coarse you want it. Temperature matters too — butter and cream fold in better while the potato is hot, and cold potato reabsorbs less and mashes stodgily, so the dish should be assembled straight off the heat.
