Why it happens

The pan was crowded or not hot enough. Food releases moisture faster than a cool or full pan can evaporate it, the temperature collapses to 100°C, and everything simmers in its own juices.

Recovering it

A pale sear can be pushed further — return it to a hotter, emptier pan. A burnt one cannot: the bitter compounds are not going anywhere, and the honest move is to cut the blackened surface away or start again. If the pan collapsed and the food has begun to steam, take everything out, let the pan get properly hot again, and return the food in batches. Whatever happened, the browned residue stuck to the base is worth deglazing into a sauce — that is the flavour you were trying to make.

The mechanism

Above roughly 140-165°C, amino acids and sugars on a dry surface react together — the Maillard reaction — producing hundreds of new aromatic compounds that did not exist in the raw ingredient. Water boils away at 100°C and cannot get hotter, so a wet surface is held at 100°C until it dries: every drop of surface moisture is time spent steaming instead of browning. This is why the two requirements are a dry surface and a pan hot enough to stay hot when cold food hits it. Searing does not seal in juices — that idea was tested and disproved long ago, and a seared piece of meat loses marginally more moisture, not less. What it buys is flavour, which is reason enough.
