Method
- slice15 minmeat firm from 30-45 min in the freezerribeye against the grain into sheets as thin as you can manage — a chilled, firm block is the only way to get there with a home knife. Thickness is the whole recipe: at 1-2 mm the slices cook through before the muscle fibers have time to contract and go chewy, and the fat in the ribeye renders into the pan rather than staying in bland ribbons
- saute10 minmedium, oilonion + a pinch of the salt, stirring occasionally until limp and gold at the edges. Get them done and pushed to the side of the pan before the beef arrives — onions release water, and water on the griddle is what prevents browning
- sear4 minhigh, butter, single layerbeef spread thin over the bare hot surface, left undisturbed for the first minute + remaining salt + black pepper. Crowding is the classic failure: the sliced beef sheds liquid instantly, and if it is stacked the pan temperature drops below the boiling point of that liquid and the meat poaches grey
- chop2 minhigh, in the panthe seared beef, cut across it with the edge of a stiff spatula until it is in rough shreds, then fold the onions back through. Chopped filling interlocks and stays in the roll; whole strips pull out in a rope on the first bite
- cook2 minheat off, moundedgather the beef into two roll-length piles + provolone laid over each. Residual heat melts the cheese down into the meat and it sets as mortar — the reason the sandwich holds together at all is that cheese, not the bread
