1 lbbeef (sirloin, ribeye or strip, at least 3 cm thick)
1 ¼ tspsalt (coarse)
1 tbspvegetable oil (high smoke point)

Method

    salt on all surfaces, uncovered on a rack, refrigerated 40 minutes to overnight
    steak + salt. Salt dissolves in the meat's own moisture and diffuses in, disrupting the muscle proteins so they hold water instead of wringing it out under heat. Uncovered also dries the surface, which is the precondition for a crust. If you have not got forty minutes, salt immediately before the pan instead — the half-hour in between is the one window where the surface is wettest

    out of the refrigerator, patted bone dry
    the steak to lose its chill, then dried thoroughly with paper. A fridge-cold steak needs so much longer in the pan that the outer centimetre overcooks before the middle arrives. Dry it harder than feels necessary: water boils off at 100°C and browning needs about 150°C, so every drop on the surface is time spent steaming

    heavy pan, oil just smoking, steak in and NOT moved for 3 minutes a side
    oil + steak, pressed down once and left completely alone until a deep brown crust has formed, then turned once. Searing does not seal in juices — that claim was tested and disproved, and a seared steak loses marginally more moisture, not less. What it buys is the Maillard reaction between amino acids and sugars, which creates hundreds of aromatic compounds that were not there before. The steak releases itself from the pan when the crust has set; if it sticks, it is not ready to turn

    heat to medium-low, butter, garlic and thyme, pan tilted, spooning constantly
    + butter + smashed garlic + thyme (+ rosemary, + shallots), the foaming butter spooned over the steak until the centre reads 52-54°C for medium rare. Basting cooks from above with hot fat rather than waiting for conduction from below, so it finishes faster and more evenly, and carries the garlic and thyme aromatics onto the meat. Stand it on its fat edge for a minute too

    warm plate or board, loosely tented, 8-10 minutes
    before cutting, and this is not optional. Heat drove the muscle fibres to contract and squeeze moisture toward the centre under pressure; resting lets the temperature even out, the fibres relax and the liquid redistribute. Cut immediately and a visible pool ends up on the board instead of in the meat. Carryover will add 3-5°C, so pull it below the temperature you actually want (+ deglaze the pan with red wine while it rests)

    against the grain, on a slight bias, thick slices
    across the grain. Find the direction the muscle fibres run and cut perpendicular to them, which shortens each fibre to a few millimetres so the teeth cut them easily. On a tender cut this matters less than on skirt or flank, but it is free, and any resting juices on the board go back over the slices
