coconut + jaggery in a small pan, stirring until the jaggery melts, coats every strand and the mixture just holds together when pressed, then + cardamom and optional nutmeg. Stop before it looks dry: overcooked jaggery firms as it cools and turns the steamed center from juicy to hard and chewy.
