Ingredients

| ½ tsp | cardamom (ground) |
| 1 pinch | salt |
| 2 tbsp | water (boiling, held back for dough correction)optional |
| 1 pinch | nutmeg (freshly grated, in the filling)optional |
Method
- mix8 minmedium-low heat, filling stays moistcoconut + jaggery in a small pan, stirring until the jaggery melts, coats every strand and the mixture just holds together when pressed, then + cardamom and optional nutmeg. Stop before it looks dry: overcooked jaggery firms as it cools and turns the steamed center from juicy to hard and chewy.
- boil3 mincovered saucepanwater + 1 tsp ghee + salt to a full boil. Reserve the optional extra boiling water separately rather than adding it now; rice flour absorbs differently from brand to brand, and correction after the first mix is safer than beginning with a slurry.
- mix3 minheat off as soon as the flour enters+ rice flour all at once, stirring firmly until no dry pockets remain and the mass pulls into damp clumps, then cover. If loose flour remains after thorough mixing, add the reserved boiling water one teaspoon at a time; if the dough is already soft, leave it out.
- rest6 mincovered until warm enough to handle but still hotthe scalded dough so steam finishes hydrating the flour. Do not let it cool completely: warm rice-flour dough can be kneaded smooth, while cold dough sets stiff and develops edge cracks that reopen during steaming.
- knead6 minhands lightly greased with remaining gheethe warm dough until completely smooth and pliable, pressing out every fissure. Pinch a small piece flat: if the edge splits, wet your fingertips with hot water and knead again; if it smears or sticks heavily, let steam escape for a minute rather than adding raw flour that would leave a chalky shell.
- prep18 minkeep unused dough covereddivide dough into 12 balls. Flatten one into a thin cup about 3 inches wide, keeping the center slightly thicker than the rim, add about 2 teaspoons filling, pinch 8 to 10 small pleats around the edge, then bring the pleats together and seal the tip. Any visible crack is a steam leak; smooth it with a damp fingertip before setting the modak aside.

Rest 3 minutes before lifting them: straight from the steamer the rice shell is at its weakest and the filled base tears easily.
