Method
- mix5 minbutter + 1.5 cups sugar creamed, eggs + vanilla inthe standard cream — then flour + cream of tartar + soda + salt folded through to a soft dough; the tartar is doing two jobs at once, tang in the crumb and lift with the soda, and no substitution does both
- prep8 minballs rolled through cinnamon + remaining sugarwalnut-size balls rolled generously through the cinnamon sugar — coated heavily, because the coating bakes into the crackled sparkling shell that is half the cookie's name recognition
