2 uniteggs
1 tspvanilla extract
2 ¾ cupflour
2 tspcream of tartar (the ingredient the cookie is about)
1 tspbaking soda

1 tbspcinnamon (for the roll)

    the standard cream — then flour + cream of tartar + soda + salt folded through to a soft dough; the tartar is doing two jobs at once, tang in the crumb and lift with the soda, and no substitution does both
