Method
- chop10 minwashed in several changes of water, stems kept and cut finergreens chopped, mustard stems sliced thinner than the leaves. The stems carry most of the pepperiness and they need longer, so cutting them finer is how both parts finish together. Wash properly — greens grown in sandy soil hold grit that will not cook out
- sweat10 min2 tbsp ghee, medium, onion until golden not brownghee + cumin seeds until they crackle and darken slightly, then + onion until soft and pale gold, then + garlic + ginger + green chillies + turmeric for a minute. Whole cumin seeds go into the fat first because their aroma is oil-soluble and released by heat, not by liquid — added later with the water they stay flat
- stew40 mingreens in with the water, covered, low, stirred occasionally+ greens + water + salt, cooked down covered for forty minutes until completely tender and the harshness has gone. Mustard greens contain glucosinolates that taste sharply bitter raw; long moist heat breaks them down, and this is why a saag cooked for eight minutes tastes acrid while the same greens at forty minutes taste sweet and mineral. - mash5 minin the pot, with a masher or a brief blitz — not smooththe greens to a coarse purée (+ cornmeal stirred in now if using). Leave texture: fully blended saag has the consistency of baby food, and the sources that specify a masher rather than a blender are making a real distinction. This is where the dish concentrates — a wet saag tastes of nothing in particular no matter how well it was seasoned, because the flavour is diluted across all that liquid
