1 lbnopales (cactus paddles, spines removed, cut in 1/2 inch strips)
1 ½ tbspvegetable oil
1 unitonion (white, sliced)
1 unittomato (diced)
1 unitchili (serrano, minced)
3 tbspcilantro (chopped)

Method

    gloves or a towel, spines and nodes scraped off with a knife, edges trimmed
    paddles cleaned and cut into short strips. Even paddles sold as cleaned keep a few nodes — run a thumb over the surface and scrape any you feel. Cut them into strips rather than large pieces: more cut surface means more mucilage released early, where you can get rid of it, instead of on the plate

    dry pan first, medium-high, single layer, stirred occasionally
    nopales in a dry or barely oiled pan, cooked until they change from bright to olive green, the liquid they throw off has evaporated, and the surface begins to squeak and stick rather than slide. That liquid is mucilage — the same soluble polysaccharide as in okra — and it only leaves as water vapour. There is a distinct moment where the pan goes from wet to dry and the vegetable starts to brown, and that is what you are waiting for

    oil added now, onion in with the drying nopales
    + oil + onion (+ garlic), cooked until the onion softens and takes a little colour. Oil goes in after the slime is gone; added at the start it forms a barrier that slows evaporation and the paddles simply stew

    off the direct heat, tomato and chilli barely warmed
    + tomato + serrano + salt (+ oregano, + eggs stirred through until just set), turned briefly so the tomato softens without collapsing. Nopales are acidic on their own — a bright, lemony sourness — so this needs less added acid than the ingredient list suggests

    off the heat
    + lime juice + cilantro (+ cotija) and taste. If the texture is still slippery, the answer is more time in a dry pan rather than more acid or salt — nothing seasons mucilage away
