Ingredients

| 3 unit | pandan leaves, knotted |
| 1 ½ tsp | salt, divided |
| 8 unit | dried chiles, softened and drained |
| 4 unit | shallots |
| 2 clove | garlic |
| 1 cup | dried anchovies (ikan bilis), divided |
| 1 tbsp | tamarind paste |
| 2 tbsp | sugar |
| 5 tbsp | neutral oil |
| 1 cup | peanuts |
| 4 unit | large eggs |
| 1 unit | cucumber (sliced) |
Method
- prep3 minrice water mostly clearRinse the rice thoroughly and drain. Removing loose surface starch helps the coconut rice stay fluffy rather than turning greasy and clumped.
- simmer18 minrice tender and liquid absorbedCook rice with coconut milk, water, pandan and half the salt at a gentle simmer, tightly covered. Coconut milk contributes fat as well as liquid, so do not add a full plain-water rice ratio on top of it.
- rest10 mingrains set and separate when fluffedTake the rice off heat and leave it covered, then remove pandan and fluff gently. The covered rest finishes hydration without breaking the grains.
- fry6 minanchovies crisp and peanuts toastedFry most of the dried anchovies and the peanuts in a little oil until crisp, then drain. Keep them out of the wet sambal so their crunch survives service.
