    peppers softened
    Melt the butter in a broad skillet and cook the green peppers until softened but still bright. The peppers need a head start because the eggs will cook too quickly to soften raw slices later.

    tomatoes broken down but still juicy
    Add the tomatoes and salt and cook until they collapse into a chunky sauce and some excess water evaporates. Stop while still juicy; reducing to dry tomato paste leaves the eggs with nothing to mingle into.

    eggs softly set with visible curds
    Add the eggs and stir gently through the tomatoes, allowing soft curds to form while some white and yolk remain visibly streaked. Remove from heat before fully firm because the hot pan continues cooking the eggs.

    Finish with black pepper and serve directly from the skillet with bread. Menemen should arrive soft, glossy and scoopable rather than as dry scrambled eggs containing tomato pieces.
