300 mlwater (warm)

    Mix flour, yeast, sugar and warm water into a smooth loose batter. It should be much softer than bread dough; stiffness prevents the fritters from expanding into airy irregular balls.

    covered, doubled and bubbly
    Let the batter rise until visibly bubbly and roughly doubled. The trapped fermentation gas is what creates the open interior when spoonfuls hit hot oil.

    175 C / 350 F oil, deep golden and crisp
    Drop small portions of batter into hot oil using wet or oiled spoons and fry in batches, turning until evenly golden. Small portions cook through before the exterior becomes too dark; oversized fritters stay doughy inside.

    Warm the honey with a small splash of water just until fluid enough to drizzle. Do not cook it into hard candy syrup; the goal is a fragrant coating that soaks only the outer crust.
