Steps

    Split the rolls lengthwise without cutting all the way through and pat the shredded iceberg very dry. The bread needs enough crust to carry a wet salad, and the lettuce must start dry because any wash water dilutes the dressing and migrates straight into the crumb.

    Layer provolone along the cut faces, then divide the ham, salami and capicola among the rolls. Keep the cheese next to the bread so it melts into a modest moisture barrier while the cured meats warm.

    Toast the open sandwiches until the provolone melts and the exposed meat edges begin to curl and crisp. Stop before the rolls become brittle; the hot base still needs to close around a large cold salad without shattering.

    While the sandwiches toast, whisk mayonnaise, red wine vinegar, Parmesan, garlic, oregano and optional red pepper flakes, then toss with the iceberg, onion and pickled peppers immediately before assembly. The delay is intentional: salt and acid pull water from shredded lettuce quickly.
