Ingredients

Servings:
4 cupcooked white rice (cold)
2 cupcooked black beans with some liquid
1 unitonion (finely chopped)
1 unitred bell pepper (finely chopped)
3 tbspSalsa Lizano
¼ cupcilantro
2 tbspneutral oil

Steps

  1. saute5 min
    onion and pepper softened
Cook onion and bell pepper in oil until soft and aromatic. Use a wide skillet from the start; gallo pinto needs room for moisture to evaporate once the beans and rice arrive.
  2. simmer3 min
    beans hot and liquid seasoned
Add the black beans with a few spoonfuls of their cooking liquid and stir in Salsa Lizano. Let the liquid bubble briefly so its seasoning distributes before the rice absorbs it.
  3. fry8 min
    rice evenly mottled, grains separate
Add the cold cooked rice and fold until the beans are evenly distributed, then let portions contact the hot skillet between turns. The finished mixture should be moist enough to stay tender but dry enough that the grains remain separate rather than becoming bean risotto.
  4. top1 min
    serve hot
Fold in cilantro just before serving and taste for additional Salsa Lizano. Serve hot as breakfast or a side, preserving the characteristic speckled rice-and-bean appearance.
