    butter + onion + celery + half the carrot + garlic, until translucent and slack with no browning — color here reads as roasted, and this soup is supposed to taste clean; browning also darkens the finished broth past the pale gold everyone expects

    + chicken thighs + cold water + bay leaf + thyme + 1 tsp salt, skimming the gray foam off the surface for the first ten minutes. Start in cold water so the albumin rises as scum you can lift out instead of clouding the pot, and never let it reach a boil — a rolling boil emulsifies the rendering skin fat into the liquid, which turns the broth opaque and greasy, and it wrings the thigh muscle into strings
