- grate8 minfine holes, by handcarrots on the fine side of the box grater, not the food processor — fine hand-grated shreds melt into the crumb and stain it orange; processor chunks stay chunks, and pre-shredded bagged carrot is too dry to melt at all
- whisk2 minflour + both leaveners + cinnamon + nutmeg + salt — the soda is there for the brown sugar's acidity and the carrots'; the powder does the lifting
- whisk3 minuntil fully emulsifiedoil + both sugars + eggs + vanilla until thick and uniform — no creaming stage exists in an oil cake, so this emulsion is all the structure the fat contributes; it should ribbon off the whisk
- fold3 minjust combineddry into wet, then carrots + walnuts at the last streak of flour — the batter is heavy with carrot and wants to be overmixed; every stroke past combined is chew in the crumb. Fold in the listed raisins with the carrots and walnuts, stopping as soon as everything is distributed.
