Method
- fry8 minmedium, then remove baconbacon in a dry skillet until the fat has rendered out and the meat is crisp; lift the bacon and leave the fat — that rendered fat, not the oil, is what the potatoes fry in
- fry12 minmedium, covered 6 min then uncovered+ vegetable oil + diced potato + onion + half the salt, lid on first so the potatoes steam through, then lid off so the surface moisture leaves and they can actually brown. Crowding or skipping the covered phase gives you scorched cubes raw at the center
- mix2 minoff heatbeaten eggs + remaining salt + black pepper, whisked only until the yolks disappear — salting now, before cooking, keeps the proteins from bonding as tightly and holds the curd tender
- fry4 minlow, stirring constantlybutter + egg mixture in a clean pan, pulled off the heat while still visibly wet and glossy. Eggs carry enough residual heat to finish themselves; anything that looks done in the pan is overdone in the burrito, and overcooked egg weeps water that turns the tortilla to paste
