Method

    yeast + sugar + half the warm milk + all the buckwheat flour, whisked to a loose sponge — milk hotter than a fingertip can stand kills the yeast outright, and cold milk simply stalls it. Buckwheat goes in first because it is the slowest to hydrate and its flavour is what the long ferment is for; the sponge is ready when the surface is domed and pocked and smells faintly of beer

    sponge + remaining milk + all-purpose flour + salt + egg yolk + melted butter, whisked just to smooth. The wheat flour arrives now, not at the start — its gluten is the only thing in the bowl that can trap gas, and developing it early would only let the first ferment blow out and collapse

    covered, warm, undisturbed
    the full batter, until it is visibly bubbled through and has risen by roughly half. Do not stir it down; every bubble knocked out now is a hole missing from the finished cake

    egg white alone, until it holds a peak that flops at the tip — stiffer than that and it will not disperse without tearing the batter apart

    gentle, minimum strokes
    batter + whipped egg white, in two additions, cutting down and turning over rather than stirring. The yeast gives flavour and an open crumb; the whites give lift in the pan during the seconds before the protein sets. Losing them to over-mixing gives you a dense cake that still tastes right, which is the most annoying possible failure

    batter in 2-tbsp pools, spaced apart, until the surface is matte and pierced with holes and the underside is lace-brown — about 2 minutes — then flip and give it 1 minute more. Medium, not high: buckwheat scorches bitter well before wheat browns, and a pan hot enough to hurry the first side will set the crust before the gas inside has finished expanding. Wipe fresh butter into the pan between batches so the milk solids never build up and blacken
