Steps
- prep3 minstalks off, fronds reserved, bulb halved lengthwise and coredtrim the stalks flush with the bulb and keep about 2 tbsp of the feathery fronds; take a thin slice off the root end, halve each bulb through the root, and cut out the solid triangular core from each half. The core is a wedge of dense fibre that will not soften in lemon juice no matter how long it sits, and leaving it in means every shave taken from the base of the bulb carries a hard spine through the middle of it. Any tough or bruised outer layer comes off here too.
- slice5 minmandoline at its thinnest setting with the guard, or a knife with a genuinely keen edge β 1 to 2 mm, near-translucentfennel halves shaved cut-side down into rounds thin enough to bend over the blade rather than snap off it, and thin enough that you can see the board's colour through them. Thinness here is a flavour control, not a garnish trick: anethole, the compound that makes raw fennel taste of aniseed, reads as harsh in a thick fibrous plank and as sweet and delicate in a shave the acid can get all the way through. This is also the step where the edge decides the dish. A dull blade does not cut the fennel, it crushes it β the cells burst instead of parting, the slice weeps its liquid onto the board, and the crushed faces brown within a few minutes; you can see both failures happening while you work. If the mandoline is dragging or the knife is skidding rather than falling through the bulb, stop, because no dressing recovers bruised fennel. Shave close to serving: cut fennel oxidises quickly and loses its fresh anise aroma faster than it loses its crunch.

Salt dissolves in the acid and stays dissolved; tipped into oil it stays a grain and lands on one slice. The ratio is deliberately a range β the source set runs from an even one-to-one of oil to lemon up to a conventional three-to-one vinaigrette β so start near one and a half to one, and taste the dressing against a slice of the actual fennel rather than off a spoon, because the bulb's own sweetness is half of the balance. Honey and Dijon go in here if you are building the American version.
- mix2 mintossed by hand, lifted from underneathshaved fennel + reserved fronds + dressing, turned over gently until every slice carries a film. Use your hands: tongs grab a wad of shavings and snap them, and a spoon presses them against the side of the bowl. Add half the dressing, toss, taste and then decide about the rest β an over-dressed shaved salad slumps and cannot be un-slumped. Fold the listed thinly sliced tart apple into the fennel just before dressing; coat the slices promptly and serve while crisp.
- top1 minserved immediately, or held 10 to 30 minutes for the marinated version+ shaved Parmigiano + toasted pine nuts scattered over the top rather than tossed through, so they stay visible and the cheese does not clump in the dressing. Then choose openly between the two schools: serve it now and it is crisp, aromatic and sharply anise, or leave it ten to thirty minutes and the salt and acid draw water out and soften the shavings into something rounder and more marinated. Both are legitimate. What is not legitimate is drifting past the half hour β by then the fennel is sitting in a pool of its own liquid, the dressing has been diluted by it, and the salad has gone limp without having been improved.
