Mass does not depend on packing, humidity or how the cup was filled, so it is the only measurement that makes a recipe reproducible. It also unlocks ratio thinking, which is how professional baking actually works: expressing every ingredient as a percentage of the flour weight โ baker's percentage โ means a formula scales to any quantity without arithmetic errors, and two recipes can be compared directly. A dough at 70% hydration is a known thing; a dough with 'three cups of flour and a cup and a half of water' is not, because nobody knows how much flour that was. Weighing also removes an entire class of failure in bread and pastry, where a ten percent error in hydration is the difference between a slack dough and a stiff one.
