Mechanism

Yeast consumes sugars and produces carbon dioxide and ethanol. The gas cannot escape a properly kneaded dough because the gluten network is elastic and gas-tight, so it inflates thousands of tiny pockets and the dough expands. Two things govern the rate: temperature and food. Yeast works fastest around 25-30Β°C and slows sharply when cold, which is what a refrigerated overnight rise exploits β€” the slow fermentation produces more flavour compounds relative to gas. Enriched doughs, with sugar, butter and egg, rise more slowly rather than faster: sugar competes with the yeast for water and fat coats the gluten, so expect close to double the time a lean dough takes. Over-proofing is a real failure and not just excess: the gluten stretches past what it can hold, and the structure collapses in the oven.

Success criteria

  • The finger dent test is the reliable one. Press a floured finger about a centimetre in β€” if it springs back fully it needs longer, if it fills in slowly and leaves a soft mark it is ready, if it stays fully dented and sighs it has gone too far.
  • Roughly doubled in volume, judged by eye against the container rather than by the clock.
  • The surface goes from matte and slack to domed and slightly taut.
  • It smells faintly of beer and bread rather than of raw flour.

Failure guards

The dough barely moved after hours.
Dead yeast, a cold room, or salt added directly onto the yeast before mixing. Yeast that has been killed by hot liquid β€” above about 50Β°C β€” never recovers.
It rose beautifully, then collapsed in the oven into a dense slab.
Over-proofed. The gluten was stretched past its limit and had nothing left to hold the oven spring.
Huge irregular holes and a pale, tight crumb underneath.
Under-proofed and under-developed. The gas concentrated in a few weak points rather than distributing through a fine network.
