Mechanism

Whipped egg white or cream is a foam โ€” air cells held in a thin protein or fat film. That film is fragile, and stirring shears it, collapsing bubbles and releasing the air that was going to be the structure of the finished thing. Folding replaces the shearing motion with a lifting one: the spatula cuts down through the centre, sweeps along the bottom, and turns the heavy mixture up over the light one, so the two interleave rather than grind against each other. The density difference is the other half of the problem โ€” a stiff base and a light foam do not combine easily, so the first third of the foam is sacrificed, stirred in properly to slacken the base, and only then is the rest folded. That sacrificial third saves more air than gentleness alone ever could.

Success criteria

  • Streaks disappear gradually while the mixture stays visibly aerated and holds its volume.
  • The spatula meets little resistance โ€” a heavy drag means the base was not slackened first.
  • It is done the moment no streaks remain. Every additional fold past that costs volume for nothing.
  • The finished mixture mounds softly rather than pouring flat.

Failure guards

The batter went from light to liquid and the cake did not rise.
Overfolded, or stirred. The foam collapsed and released its air before it reached the oven.
Streaks of unincorporated white through the finished bake.
Underfolded. This is far less damaging than overfolding and is the error to prefer if you must have one.
The foam deflated immediately on contact with the base.
The base was too stiff, too warm, or greasy. Slacken with a third of the foam first, and make sure the bowl and whisk were clean โ€” any fat prevents egg white foaming properly.
